In the kitchen: Sugar Cookies

Do you need to tell someone you love them? Need to say sorry but don't know how? Make these! Made these cute little gals for WRP's radio event a few weeks ago and thought I'd share the keep it simple sugar cookie recipe with ya'll! Seriously some sugar love going on here. Even if you don't like sugar, make them for that someone.

Who doesn't love cookies?. Do you you love cookies?! Damn I love cookies.

Gather:
200g unsalted room temp butter
200g sugar
1 egg
380g plain sifted flour(plus just keep some on the side for rolling and cutting the cookies)
2 tsp vanilla extract or 1 vanilla bean pod

What to do::
1. In a bowl, cream the butter and sugar together (I do this with a fork). Mix it until it gets sandy in texture. Don't overwork this. When it seems like the butter and sugar are pretty good friends (well combined), let it be.

2. Beat in the egg & vanilla and combine well with the sugar & butter. Add in the flour (not all at once, 1/2 and 1/2) and start to mix/combine (I do this with a fork and then start to use my hand to combine in the flour). Knead for about 2 mins. Wrap in cling film and chill for a few hours. At least 1.

Roll out and shape away!

My oven is super tiny so I bake at 200C for 5 - 8mins or until lightly golden brown. 180C - 220C should do work with any oven.
